What's Cooking?

WILD Food Cafe is the latest addition to Neal's Yard in Covent Garden. With a vegan menu and an eye towards seasonal and locally grown produce, the cafe is drawing more than vegans, anyone who loves delicious food is flocking to Covent Garden to see what all the fuss is about. Chef Joel Gazdar has shared his delicious recipe just in time for pumpkin season. Enjoy it while you can!



400g raw pumpkin or butternut squash, peeled and diced
200g sweet corn
85g diced red pepper
600ml apple juice
2 1/2 teaspoons fresh ginger, minced
2 1/2 teaspoons fresh garlic, minced
1/2 to 1 teaspoon sea salt (or to taste)
60g mashed avocado
2 teaspoons raw pumpkin seeds for garnish
1 teaspoon fresh thyme, chopped, for garnish

In a high speed blender, combine pumpkin, corn, red bell pepper, apple juice, ginger, garlic, salt and avocado. Process for several minutes, until smooth. (If too thick, add more apple juice.) Divide into 4 soup bowls and garnish with raw pumpkin seeds and fresh thyme. This soup can be served hot, cold or warm.
