What's Cooking?

ARE you the type that likes to have dessert before – or possibly in lieu of – your meal? Well, we've just discovered your new home away from home: MADD on Rupert Street. This pudding heaven offers a range of healthy snacks and desserts with mango as the main ingredient. A mix of Eastern and Western styles (think mango and passion fruit panna cotta) keeps things interesting and ever so tasty. And now you can whip up some mango magic right in your own kitchen with this Mango Sticky Rice recipe. Enjoy!

 

Mango Sticky Rice

• 5-6 ripe mangoes peeled and sliced

• 2 cups sticky rice, soak overnight or 5 to 8 hours and drain

• 1 cup coconut cream

• 1 teaspoon salt

• ½ cup sugar

 

Method:

1. Boil 3 tablespoons of coconut cream and a pinch of salt over low heat. Set aside for topping.

2. Wrap the sticky rice in a clean towel and place in a double steam for 25 to 30 minutes.

3. Dissolve the sugar in the coconut cream over a very low heat. Add salt. Stir well. Remove from the heat. Put the cooked sticky rice in a bowl. Gradually blend in the coconut cream. Stir with a wooden spoon, cover and let stand for 15 minutes.

4. Serve with mangoes and a scoop of mango ice-cream.

Makes 5-6 servings
