What's Cooking?

DAWN French once said, "I never do any television without chocolate. That's my motto and I live by it." And with chocolate's known health benefits and added morale factor, perhaps we should all adopt the same philosophy. This little gem of a recipe is taken from Cooking with Chocolate (Flammarion, edited by Frederic Bau, Ecole du Grand Chocolat, Valrhona) and is the perfect way to surprise guests at your next dinner party or yourself any old time. Chocolate as good as this never goes out of style.

CHOCOLATE LAVA CAKE

Preparation time: 45 minutes
Baking time:
10 to 12 minutes
Serves 6 to 8

Ingredients
125g dark chocolate 70% cocoa
100g butter
145g caster sugar
4 whole eggs
50g flour

Utensils
6 to 8 moulds of 6 to 8cm in diameter


Method

1. Butter the moulds.

2. Chop the chocolate and melt it down slowly in a bain-marie or in a microwave oven set a medium power. Stir in the butter.

3. In a mixing bowl, combine the eggs and sugar together.

4. Stir in the butter and chocolate. Sieve the flour and fold it in.

5. Garnish the moulds with the chocolate cake batter.

6. Bake at 190°C for about 10 to 12 minutes.

7. Remove from the moulds directly on the plate and serve immediately.
